Keen for Quinoa

Quinoa – pronounced “keen – wah” – is one of those so called superfoods.  This ancient South American grain-like crop is:

  • gluten free
  • complete protein source plant food (good for us vegetarians)
  • high in fibre, iron, magnesium
  • tastes yummy, a bit nutty, a bit chewy, a bit fluffy.

A quick search on the internet will find plenty of quinoa recipes, but basically you boil the seeds for about 15 minutes until they turn translucent and they look a bit like couscous.

Here is what I made for lunch today.

simple and fresh and tasty - quinoa

Orange and carrot quinoa

Simmered 1 cup of quinoa with 2 cups of water until translucent.

Quickly (1 minute) heat together

  • 1 tbs olive oil
  • 1 grated carrot
  • 3 thinly sliced shallots
  • 2 tsp grated fresh ginger
  • 1/2 cup orange juice

Add carrot mixture to quinoa. Can eat hot or cold.
