Winter food – salad? #BlogJune

Salad is not the first thing that comes to mind when I hear the phrase “winter food”.  Tonight however I had the following tasty wintery salad.

It comprised

  • thin slices of oven baked potatoe (slightly crispy around the edges)
  • tomatoes and thyme, also roasted

Coupled with pan fried

  • red onion and garlic
  • haloumi
  • baby spinach
  • lentils

Finished with a squeeze of lemon juice.

I would include a picture of this delicious winter salad, but it was so tasty I’ve eaten it all!  So as a compensation here is a picture some potatoes (a very wintery food)
